Preparing the Marinade

Massage the marinade thoroughly into the lamb. For best results, make small incisions in the meat so the marinade penetrates deep into the lamb. The longer it marinates, the better the flavour — ideally, let it rest in the refrigerator for at least 4 hours, or overnight for maximum flavour.

Roasting the Lamb

Preheat your oven to 180°C (350°F). Place the marinated lamb on a roasting tray and drizzle with olive oil to keep it moist during cooking. Cover the lamb with foil and roast for 2.5 to 3 hours, depending on the size of the leg, until the meat is tender and falls off the bone.

For a crispy, golden-brown crust, remove the foil during the last 30 minutes of roasting. Baste the lamb with its own juices occasionally to enhance its flavour and keep it juicy.
