At Spice Village Halal Meat & Foods, we take pride in offering premium halal lamb that’s perfect for this traditional dish with a flavourful twist.

This Pakistani-style lamb roast combines the best of traditional spices with a roasting technique that results in tender, juicy meat with a deliciously crispy crust. Whether you’re hosting a festive gathering or preparing a hearty family dinner, this recipe is sure to impress everyone at the table.

Ingredients for Pakistani-Style Lamb Roast

  • 2 kg leg of lamb (bone-in or boneless)
  • 4 tbsp plain yogurt
  • 2 tbsp lemon juice
  • 4 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tbsp red chili powder (adjust to taste)
  • 1 tbsp turmeric powder
  • 1 tbsp garam masala
  • 1 tbsp ground cumin
  • 1 tbsp ground coriander
  • 1 tsp salt
  • 2 tbsp olive oil
  • Fresh coriander and mint leaves for garnish

Preparing the Marinade

Start by creating a flavourful marinade. In a large bowl, mix the plain yogurt, lemon juice, minced garlic, grated ginger, and all the spices — red chili powder, turmeric, garam masala, cumin, coriander, and salt.

Massage the marinade thoroughly into the lamb. For best results, make small incisions in the meat so the marinade penetrates deep into the lamb. The longer it marinates, the better the flavour — ideally, let it rest in the refrigerator for at least 4 hours, or overnight for maximum flavour.

Roasting the Lamb

Preheat your oven to 180°C (350°F). Place the marinated lamb on a roasting tray and drizzle with olive oil to keep it moist during cooking. Cover the lamb with foil and roast for 2.5 to 3 hours, depending on the size of the leg, until the meat is tender and falls off the bone.

For a crispy, golden-brown crust, remove the foil during the last 30 minutes of roasting. Baste the lamb with its own juices occasionally to enhance its flavour and keep it juicy.

Serving Suggestions

Once the lamb roast is cooked to perfection, let it rest for about 15 minutes before carving. Garnish with fresh coriander and mint leaves for an extra burst of colour and flavour.

This Pakistani-style lamb roast pairs beautifully with saffron rice, naan, or spiced potatoes. You can also serve it with a refreshing cucumber raita or a tangy mint chutney to balance the bold flavours.
