Ingredients for Halal Shawarma

- 0.5 kg boneless, skinless halal chicken shawarma thighs
- 2 tbsp olive oil
- Juice of 1 lemon
- 1 tsp shawarma spice mix
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp cumin powder
- ½ tsp cinnamon powder
- ½ tsp turmeric
- ½ tsp chili flakes (optional)
- 1 tbsp Greek yogurt (for extra tenderness)
- 0.5 tbsp salt
For the Wrap:
- Middle Eastern pita bread or large flatbread
- Shredded lettuce
- Sliced tomatoes and cucumbers
- Thinly sliced red onions
- Pickled turnips (optional but recommended!)
- Pickled gherkins/cucumbers (chopped into strips)
For the Garlic Tahini Sauce:
- ½ cup Greek yogurt
- 2 tbsp tahini
- Juice of ½ lemon
- 1 tsp garlic powder
- Pinch of salt
- 1 tbsp water (to thin out if needed)
Instructions for making halal shawarma
- Start with marination of chicken with olive oil, lemon juice, all the spices, and Greek yogurt. Let it sit for at least an hour (overnight is best for deep flavour).
- Bake in a preheated oven at 200°C for 20-25 minutes, flipping halfway through.
- Slice the cooked chicken into thin, juicy strips.
- Mix all the garlic tahini sauce ingredients in a small bowl.
- Assemble your shawarma by layering lettuce, tomatoes, cucumbers, pickles, and chicken inside your pita bread. Drizzle with the creamy garlic tahini sauce.
