Festive Halal Turkey Recipe

Ingredients
• 1 whole halal turkey, 4 to 5 kg
• 150 g unsalted butter, softened
• 6 garlic cloves, crushed
• 1 tbsp black pepper
• 2 tsp salt, adjust to taste
• 1 tbsp mixed herbs, thyme rosemary sage
• 1 lemon, halved
• 1 onion, quartered
• 1 cup chicken or vegetable stock
Method
Remove the turkey from the fridge one hour before cooking. Pat dry.
Preheat the oven to 180°C fan.
Mix butter, garlic, salt, pepper, and herbs. Rub generously over the turkey, including under the skin for moisture and flavour.
Place lemon and onion inside the cavity. Put the turkey in a roasting tray and pour stock into the base of the tray.
Cover loosely with foil and roast for about 20 minutes per kg.
Remove foil for the final 30 to 40 minutes, basting occasionally, until golden.
The turkey is ready when the juices run clear and the thickest part reaches 75°C.
Rest for at least 20 minutes before carving.
Serving tip
Serve with roast potatoes, seasonal vegetables, and halal gravy. Leftovers freeze well and are perfect for sandwiches or soups.
