Method
Make deep cuts all over the lamb leg. Mix the marinade and rub it thoroughly into the meat.
Cover and marinate for at least 8 hours. Overnight gives best results.
Preheat the oven to 170°C fan. Place lamb in a roasting tray and cover tightly with foil.
Roast for 3 hours. Remove foil, increase heat to 200°C, and roast for another 20 to 30 minutes until browned.
Rest for 15 to 20 minutes before slicing.
Serving tip
Serve with naan, rice, roasted vegetables, or a light yoghurt sauce.
