Lamb Shoulder Recipe for Festive Roasting

Ingredients
- 1 lamb shoulder (2–2.5 kg)

Marinade
- 4 tbsp yoghurt
- 2 tbsp ginger-garlic paste
- 2 tsp garam masala
- 1½ tsp black pepper
- 1 tsp chilli powder
- 2 tsp salt
- 2 tbsp lemon juice
- 3 tbsp oil
Method
Rub the marinade deeply into the lamb shoulder, cover, and marinate overnight. Preheat the oven to 160°C. Place the lamb in a roasting tray with half a cup of water, cover tightly with foil, and slow-cook for 3½–4 hours.
Remove the foil, increase the heat to 200°C, and roast for a final 20 minutes until caramelised and tender. The meat should be soft enough to pull apart.
Serving Tip
Serve family-style with pilau rice, roasted vegetables, or flatbreads for a comforting festive feast.
